What's your favorite vegetarian dish?

  1. I know you said you wanted to be light on the bread and cheese, but this is a delicious vegetarian sandwich I make (well, made, but am now gluten free!). My family loves this sandwich!
    Ok, you need oil, garlic, crimini, oyster and shitake mushrooms, baby broccoli or broccoli raab, Braags Liquid Aminos, a smoky vegie stock, arrowroot, gruyere cheese and a crunchy baguette.
    First thing, slice the baguette to decent sandwich size and then slice in half for fillings.
    Heat sautee pan with oil (we use avocado oil as it's high heat) and add garlic and vegie stock. Add mushrooms sliced thin. Sautee on medium flame about two minutes and add the baby broccoli. Cover and let cook until slightly soft. Add more stock as needed if it gets dry. When finished, add arrowroot to thicken the sauce. After you turn burner off, add Braags to taste.
    Line bread with slices of the gruyere cheese. Place vegies on bottom side of baguette, place the top on and grill the sandwich. If you have a panini maker or George Foreman grill, that will be perfect. Otherwise, you can do it on a pan with another weighted pan on top and flip it. You want the cheese to get melty. Enjoy!
