Green Apple Porridge


Notes:

  • This recipe is originally by Adina Niemerow in her book Super Cleansehowever, the recipe below is my version based on what she presented in her Yahoo clip when she appeared in Reluctantly Healthy.
  • This dish also requires a food processor or some chopping machine.
  • The ingredients below are rough estimates because the truth is that you can add or alter whatever you like according to your taste.
  • Can be preserved in the fridge for about 5 days happily. After that, it looks a little less happy

Ingredients
5 green apples, chopped
2/3 cups of raw almonds, soaked overnight
5 dried figs, chopped (I use conadria figs or you can use dates)
1 Tablespoon of ginger, finely minced
1½ Tablespoons of flax seed powder
lemon juice, squeezed from half a lemon
Almonds already soaked


Soaking the almonds
I start the night before by soaking the almonds in water. Just put almonds in a bowl and cover them with water – it's really that easy. Do fill the bowl about 1 inch above the almonds as they will soak the water up. If I forget to soak the almonds the night before, I just soak them that morning while I'm preparing the rest of the dish. Drain the water from the almonds before adding them.


Chopping prep
First I peel the ginger and throw it in the good processor to mince (why do it by hand when you're going to use the machine anyway?) Then I chop up the apples and cut the figs into bits with kitchen scissors.

Putting it all together
I keep the minced ginger in the food processor and add the almonds, then the figs and apples. I squeeze lemon juice all over it, sprinkle the flax seed, and then chop it all up in the food processor.



Storage
You can store this in the fridge for about 5 days. It usually takes me 4-5 days to finish it all if I have some every day.
